In the beginning, powdered eggs were the only option. For those that may have been too squeamish, they were used and then quickly thrown away because the taste was too bad. It was hard to find something better.
The powdered eggs I use are not the sort that are used to make egg creams. These are the sort of eggs that you buy a jar of in a grocery store. They’re not all that good to eat, but they are the only option for many people.
I think the powdered eggs are superior, but I am not sure I would choose the powdered eggs over the real eggs. While powdered eggs may be cheaper and easier to find, the taste of the real eggs is much better, and the powdered eggs don’t have the same qualities.
