The best way to be a good Japanese cook in today’s world is to be a fan of the Japanese food. It’s as important as it is delicious and easy to make. I’m not going to go into the whole “Japanese food is a thing” or “Japanese cuisine is the best thing to ever happen to the world”, but I will talk about a few of my favorite dishes that are made with kombu.
One of the most popular types of kombu is the “shirodish” or “shiro dish”. A shirodish usually has a sauce made from kombu, and it is made into a pretty much any sort of dish you can imagine. A really great shirodish can consist of half the kombu in the pot, then half a large piece of carrot, and a small piece of cucumber.
