Egg white color is one of those things that is easy to overcomplicate, and it is a huge source of stress for interior designers. Because egg whites have such a high water content, they can’t be used in a lot of other recipes, and you can’t just simply throw them in a salad dressing because the color changes so quickly. You have to use egg whites to make an all-important cream sauce to go with your pizza.
Egg whites can be used in a lot of food, but because they tend to be quite expensive, the use of egg whites in a recipe is very uncommon. If you’re one of the few chefs who does use egg whites (which I am), you don’t want to let your customers down by overcomplicating it.
